With Chinese New Year around the corner, have you thought of what to bake or cook for your family and friends? In this festive season, it is time to whip out wonderful feast for your love ones. SCS butter had come out with sweet and savoury recipes that are easy to make. I had tried out baking the tangerine cupcakes with lemon cream cheese frosting yesterday using SCS butter and cream cheese. Western cupcakes fusion with Asian dried tangerines as one of the ingredients. I love the zesty lemon butter cream cheese frosting that goes well with the cupcakes. An interesting cupcake recipe by SCS butter for the coming Chinese New Year.


200g SCS Unsalted Butter, softened
150g caster sugar
3 eggs
430g self-raising flour, sifted
2 Chinese dried tangerines, seeds removed and coarsely chopped, more for garnishing (optional)
1 tsp vanilla essence
60ml milk
For the frosting
80g SCS Unsalted Butter, softened
100g SCS Cream Cheese
200g icing sugar sifted, more as needed
1 tsp vanilla essence
1 tbsp lemon juice
Yellow food colouring, as needed


1. Preheat oven to 170C. Line a 12-hole muffin tray with cupcake liners.
2. Cream butter and sugar until pale and fluffy. Add eggs, one at a time, beating well between each addition.
3. Fold sifted flour into butter and egg mixture. Add dried tangerines, vanilla essence
and milk and mix well.
4. Divide cupcake mixture between the 12 cupcake liners. Bake cupcakes for 25 mins or until an inserted skewer comes out clean. Allow cupcakes to cool completely before frosting.
5. To prepare frosting, cream butter and cream cheese until smooth. Add icing sugar a few spoonfuls at a time, followed by the vanilla essence, lemon juice and food colouring. Continue to
beat until smooth. Add more icing sugar, if necessary, until the frosting holds its shape.
6. Fit a piping bag with the frosting tip of your choice. Fill half the bag and pipe your desired design on each cupcake. Garnish each with dried tangerine before serving, if using.
