With Chinese New Year approaching in three weeks time, have you planned of what to bake and cook for the coming Chinese New Year? I am going to share a very simple and yet delicious cookies recipe for the coming festive period bake.
200 gm Butter
80 gm Icing Sugar
40 gm Brown Sugar
1 no Egg
250 gm Plain Flour
1 tsp Baking Powder
½ tsp Vanilla Extract
2 tea bag Earl Grey tea leaves
1] Sift the flour and baking powder together. Soften butter under room temperature.
2] If brown sugar clumps together, breaks them up. Cut open the tea bags and collect the tea dust in a bowl.
3] Cream butter, icing sugar and brown sugar till light and fluffy.
4] Add in the egg and vanilla essence and mix well.
5] Fold in flour and tea dust and mix well.
6] Scoop and shape the cookies onto a baking tray line with baking paper.
7] Bake at 170 degree celsius for approx. 15 minutes or till golden brown.
