Today is a great Saturday and my sister and brother-in-law are coming over our place for a visit.  I have decided to prepare some small bites for them since they are coming in the afternoon.

It’s a healthy meal and it is very easy to prepare and it only takes less than 30 minutes. You can have them at lunches too, not necessarily to be a afternoon snack. Here are the ingredients (all ingredients from Cold Storage):


  • 1 Packet of Wild Rockets.
  • Some 16-18 Honey Cherry Tomatoes or just grab a box of them.
  • 5 Pita Pockets. More if you have more to prepare. But remember, 5 Pita Pockets serves 10 because you are halving them later.
  • 2 pieces of Honey Glazed Chicken. (Do check out Cold Storage having “Buy 2 for price of 1” promotion over at the meat counter)

Here’s how to do it:

image003Step 1 – Halve the cherry tomatoes.

Step 2 – Wash the Wild Rockets. Remove bad leaves if you see them. Make sure the water are drained well. Leave it in a big bowl.


Step 3 – Mix the tomatoes and the Wild Rockets. Add olive oil (a generous 3 swirls around the bowl) and some black pepper. Stir the vegetables well. You will know it’s enough when the vegetables are glossed with olive oil.


Step 4 –  Peel the Honey-Glazed Chicken into small bite-sized chunks.


Step 5 –  Prepare the oven, setting the oven into Grill mode. Brown the Pita Pockets at 5 mins per side.


Step 6 –  Next heat up the peeled Honey Glazed Chicken for 5 mins in the same mode.

Step 7 –  Halved the Pita Pockets. Careful because they are hot.

Step 8 –  Open a Pita Pocket and start by stuffing the Wild Rockets, followed by some chicken and finally the tomatoes. You can stuff more but make sure the pockets don’t tear on the sides.

Step 9 –  Placed them nicely on a serving plate and ready to be served.

Some options are that you can replace the tomatoes with salsa which you can make yourself or any sauces such as pesto sauce to go along. It all depends the type of chicken you use. It’s really fun and easy to make.


If you have left over ingredients, you can make a small salad out of the remaining tomatoes, chicken and the wild rockets. Stir them well again, place it in a bowl and serve together with the Chicken and Wild Rockets Pita Pockets.
