CHINESE NEW YEAR COOKIES CLASS

Have you tried baking ten different types of cookies in a day? Yes I did! I had attended the intensive Chinese New Year cookies lesson conducted by Mrs Fong again. I had learnt a lot from her in the class and will try to bake some of her recipes next week. Just went to Phoon Huat and NTUC fairness to get those ingredients and it was very crowded over at Phoon Huat. Guess next year I will stock up the ingredients one month before Chinese New Year to avoid the crowd and get ready for baking! Here are the cookies that I had learnt for the lesson:

 Kueh Bangkit

A very challenging cookie to bake!

 Kueh Bahulu

 Kueh Rose

 Almond Cookies

 Kueh Makmur

 Suji Cookies With Almond

 Cashew Nut Cookies

 Peanut Cookies

 Walnut Cookies Hup Tao Soh

 CornFlakes Cookies

Posing with my group mates after the class.

KUEH BAULU RECIPE-CHINESE NEW YEAR GOODIES-PART II

My 2nd attempt in baking the Kueh Baulu. Yes this time round, it taste soft and fluffy not as hard as compared to my first attempt. Here is the recipe for baking the all time favourite Chinese new year festive goodies Kueh Baulu.

Ingredients

2 large eggs

60 grams sugar

1/2 tsp vanilla extract

60 grams plain flour

1/4 baking powder

Method:

  1. Put eggs into a mixing bowl. Use high speed to whisk until frothy.
  2. Add in sugar slowly.
  3. Whisk mixture until very light and fluffy for about 20mins
  4. Fold flour slowly into egg mixture in one direction.
  5. Greased the tray with oil using a brush or pandan leave.
  6. Pour into greased trays.
  7. Bake in a pre-heated oven at 200ºC 10/15mins till golden brown. Remove Kueh Baulu from the moulding tray.

I used the pandan leave to brush the moulding tray.

The Kueh Baulu is crispy on the outside and it taste great!

A easy recipe and it is not so time consuming as baking other CNY festive goodies. All time favourite goodies that is simple to bake. Go and try it!

Practice makes perfect!

I shall continue to experiment and look up for other chinese new year goodies to bake. Stay tune! :)

KUEH BAULU RECIPE-CHINESE NEW YEAR GOODIES-PART I

Time really flies and it is the starting of a brand new year. Welcome to 2011 and the first blog post of the year. Christmas had just passed with Chinese New Year in about 4 weeks time. It is time to bake Chinese New Year festive goodies and some recipes with the readers.  This is my blog post last year Jan on Pineapple tart recipe. Will be doing pineapple tarts this year too if time permit.

This is my first attempt in baking Kueh Baulu. Although the ingredients and steps in baking the Kueh Baulu are very simple, my first attempt had failed. The Kueh Baulu tasted rubbery and hard. The Kueh Baulu is not crispy on the outside too. It is difficult removing the Kueh Baulu from the moulding holder. However the appearance of the Kueh Baulu looks good as shown in the picture below.

KUEH BAULU

After troubleshooting what had went wrong, I should not mix the eggs and sugar together at the same time. Instead, the eggs should be mix first and the sugar will be added slower and mix at a high speed. By mixing the egg and sugar together at the same, the mixture seems very thick and viscous and after adding the flour, the mixture had thickened and not smooth.

I shall try again with the correct method. Stay tune in my next post!

HAPPY 2011 to all!

Cheers! :)
